HIMALAYAN WATER BALSAM HONEY
Absolutely gorgeously floral. Strong honey that is light amber
in colour. It is the only significant source of late forage
for bees. Himalayan Water Balsam was introduced in the UK by
the Victorians. It quickly escaped into the wild and is now a
pernicious weed for waterways but a bonanza for bees.

CLOVER HONEY
Mild honey with a grassy floral scent and a subtle flavour.
Many of our customers tend to mix clover honey with other
types to personalise it to their taste. All our clover honey
is produced in late spring and early summer to deliver the
best and strongest possible flavour and quality

DANDELION HONEY
Dandelion honey is quite
aromatic. Slightly yellow (like the flower). Unmistakable flavour with notes of cedar and moss.
Contains high levels of natural sugars which makes it
ideally suited as an energy booster. Can also be used to improve digestion.
We cold press and hand pack it. It sets
hard quickly if not warmed ( can be gently warmed to make it
runnier if you prefer.

HEATHER HONEY
The King of Honeys.
This honey is more expensive
because it is much harder to produce than any other honey. It
is very labour-intensive but oh boy does it taste special!
We are very fortunate to have most of our bee hives located on sites
abundant with moorlands ling heather (Calluna vulgaris).
It
is coming into flower around the end of August and our hives
share the changing colours of the moors with the sheep and
grouse as they turn from a dark green into a spectacular
purple

You
can't get more natural than this amazing cut comb honey. Still
capped, we only cut it into rectangles for easy eating. It is
the closest to actually standing next to the hive and eating
